BASIL FUSILLI WITH TOMATO SAUCE

INGREDIENTS
CHERRY TOMATOES
5 TO 6 TOMATOES
TOMATO PASTE
1/2 TEASPOON
GARLIC 3 TO 4 CLOVES (OR MORE IF YOU LIKE)
RED ONION 1 : MEDIUM SIZED
BUTTER
30 GRAMS

RECIPE
Begin by heating 2–3 tablespoons of olive oil in a pan on low heat. The sauce will be made slowly on low heat.
Slice the garlic into long pieces so the oil can infuse with the garlic flavor. You may also chop it into smaller pieces if preferred.
Wash and dry the cherry tomatoes thoroughly to prevent water from splattering in the hot oil.
Once the oil begins to warm, add the tomatoes and garlic to the pan and cover it.
Meanwhile, start boiling water for the pasta in a pot. Cover the pot so it heats faster.
While the tomatoes and garlic cook slowly in the oil, chop the red onion.
Add about half a teacup of water to the pan, then cover it again.
Uncover the pan and add the butter. Cook for about 3 minutes, or until the tomatoes begin to soften. The butter and water will emulsify, creating a creamy texture.
Add the chopped onions and mix well.
By this time, the pasta water should reach a rolling boil. This is important because this pasta cooks faster than regular pasta.
Add salt and a little olive oil to the boiling water.
Add the pasta to the water and do not cover the pot.
After 3 minutes, the pasta should be al dente. Transfer the pasta directly into the sauce and add one ladle of the starchy pasta water.
Cook the pasta and sauce together for about 1 minute so the flavors combine.
If you prefer serving the sauce separately, cook the pasta for 4–5 minutes instead.
Plate the pasta nicely and finish with freshly grated Parmesan cheese.
Optional Additions
You may add ingredients such as olives, broccoli, parsley, meats, or other chunky additions to the sauce.
This sauce pairs best with hard cheeses, as the sauce itself is hot and creamy.
